Fried honey banana

I remembered my dad use to cook a simple dessert for our family’s tea break.  The recipe’s name is fried honey banana. The only ingredients that we are going to use are banana & cooking oil.

May be you’re wondering what type of banana that can used for this recipe.  There are few types of banana that you can use to this recipe

  • Fruit-bananas: are the normal, yellow bananas, 15-30 cm.
  • Apple-bananas: are smaller, 8-10 cm., and ripen faster. They are also yellow
  • The baby-banana (pisang susa): is yellow as well and measures 6-8 cm. It is the sweetest of the banana family
  • Baking bananas: are 30 to 40 cm. large and are green, yellow or red-like. They cannot be eaten raw.

For me, I prefer the baby banana.

Peel off the banana skin and cut the banana into half (long slice). Then, prepare your cooking pan and pour in the cooking oil (you don’t need a lot, a just about 3 tablespoons is good enough).  Throw in the banana slices into the pan and cook until the color turn to brownish. Please make sure you use medium fire.  The final result shown in the picture below.

*To make more creative, you fried together with big onion and kismis. This will make the dish more delicious.

Good tips for my fellow friends who cant leave without RICE!

Eat Less Rice!

The human body was never meant to consume rice? You see, our genes have hardly changed in more than 30,000 years. However, our food choices and lifestyle have changed dramatically. The caveman would hardly recognise our food or way of life.

Caveman food was never cooked as fire was not yet tamed. Thus, he ate only those foods that you can eat without treatment with or by fire. He ate fruits, vegetables, fish (sushi anyone?), eggs, nuts and meat. Yes, even meat! You can even eat meat raw if you were starving in the forest. You have the necessary enzymes to digest meat.

However, rice, like wheat and corn, cannot be eaten raw. It must be cooked. Even if you were starving in the desert, you cannot eat rice in the raw form. This is because we do not have the system of enzymes to break rice down. You were never meant to eat rice. To make matters worse, you not only eat rice, but also make it the bulk of your food.

In some parts of Asia , rice forms up to 85% of the plate. Even if you take rice, keep it to a minimum. Remember, it is only for your tongue – not your body. Actually, rice and other grains like wheat and corn are actually worse than sugar. There are many reasons:

Rice becomes sugar – lots of it!
This is a fact that no nutritionist can deny: rice is chemically no different from sugar. One bowl of cooked rice is the caloric equal of 10 teaspoons of sugar. This does not matter whether it is white, brown or herbal rice. Brown rice is richer in fibre, some B vitamins and minerals but it is still the caloric equal of 10 teaspoons of sugar. To get the same 10 teaspoons of sugar, you need to consume lots of kangkong-10 bowls of it.

Rice is digested to become sugar.
Rice cannot be digested before it is thoroughly cooked. However, when thoroughly cooked, it becomes sugar and spikes circulating blood sugar within half an hour-almost as quickly as it would if you took a sugar candy. Rice is very low in the ‘rainbow of anti-oxidants. ‘

This complete anti-oxidant rainbow is necessary for the effective and safe utilisation of sugar. Fruits come with a sugar called fructose. However, they are not empty calories as the fruit is packed with a whole host of other nutrients that help its proper assimilation and digestion.

Rice has no fibre.
The fibre of the kangkong fills you up long before your blood sugar spikes. This is because the fibre bulks and fills up your stomach. Since white rice has no fibre, you end up eating lots of ‘calorie dense’ food before you get filled up. Brown rice has more fibre but still the same amount of sugar.

Rice is tasteless-sugar is sweet.
There is only so much that you can eat at one sitting. How many teaspoons of sugar can you eat before you feel like throwing up? Could you imagine eating 10 teaspoons of sugar in one seating?

Rice is always the main part of the meal.
While sugar may fill your dessert or sweeten your coffee, it will never be the main part of any meal. You could eat maybe two to three teaspoons of sugar at one meal. However, you could easily eat the equal value of two to three bowls (20-30 teaspoons) of sugar in one meal. I am always amused when I see someone eat sometimes five bowls of rice (equals 50 teaspoons of sugar) and then asks for tea tarik kurang manis!

There is no real ‘built in’ mechanism for us to prevent overeating of rice:
How much kangkong can you eat?
How much fried chicken can you eat?
How much steamed fish can you eat?
Think about that!

In one seating, you cannot take lots of chicken, fish or cucumber, but you can take lots of rice. Eating rice causes you to eat more salt. As rice is tasteless, you tend to consume more salt-another villain when it comes to high blood pressure. You tend to take more curry that has salt to help flavor rice. We also tend to consume more ketchup and soy sauce which are also rich in salt.

Eating rice causes you to drink less water.
The more rice you eat, the less water you will drink as there is no mechanism to prevent the overeating of rice. Rice, wheat and corn come hidden in our daily food. As rice is tasteless, it tends to end up in other foods that substitute rice like rice flour, noodles and bread. We tend to eat the hidden forms which still get digested into sugar.

Rice, even when cooked, is difficult to digest.

Can’t eat raw rice? Try eating rice half cooked. Contrary to popular belief, rice is very difficult to digest. It is ‘heavy stuff’. If you have problems with digestion, try skipping
rice for a few days. You will be amazed at how the problem will just go away.

Rice prevents the absorption of several vitamins and minerals.
Rice when taken in bulk will reduce the absorption of vital nutrients like zinc, iron and the B vitamins.

Are you a rice addict? Going rice-less may not be easy but you can go rice-less. Eating less rice could be lot easier than you think. Here are some strategies that you can pursue in your quest to eat less rice:

Eat less rice-cut your rice by half.

Barry Sears, author of the Zone Diet, advises ‘eating rice like spice’. Instead, increase your fruits and vegetables. Take more lean meats and fish. You can even take more eggs and nuts.

Have ‘riceless’ meals.
Take no rice or wheat at say, breakfast. Go for eggs instead.

Go on ‘riceless’ days.
Go ‘western’ once a week.

Take no rice and breads for one day every week.
That can’t be too difficult. Appreciate the richness of your food. Go for taste, colours and smells. Make eating a culinary delight. Enjoy your food in the original flavours.

Avoid the salt shaker or ketchup.
You will automatically eat less rice.

Eat your fruit dessert before (Yes! No printing error) your meals.
The fibre rich fruits will ‘bulk up’ in your stomach. Thus, you will eat less rice and more fruits.

P/S: It’s your life. Decide what you want to eat! But eat less rice!

Egg loaf with peanut butter spread

Last Sunday, I made a my son’s favourite dessert, egg loaf with peanut butter spread.

Simple ingredients

  • 6 pieces of bread
  • 3 eggs
  • Butter
  • Peanut butter

Break the eggs into a big flat bowl. Beat the eggs until it turn to a bit white. Then, heat your pan and put in a bit of butter. Submerge the whole bread into beaten egg. Fry the the bread until it turn a bit of brown color for both side. Repeat the same process for the rest of the breads. Take one piece bread & spread it with peanut butter. Cover it with other bread and cut into half.

P.S: This dessert is very nice to serve for morning breakfast. A simple western food.

Sweet Yam Porridge

This morning I was wondering about recipe that I want to share with you all. Suddenly I remembered about yam. It is a yam porridge and it is a bit different from normal porridge

Let me introduce you the ingredients

  • 2 or 3 pieces of yam (peel of the skin, cut into diagonal shape)
  • 2  or 3 pieces of potato (peel of the skin, cut diagonal shape too)
  • Salt & pepper
  • Water
  • Salad or other green vegetable (up to you)

How to prepare it?

It is very easy. First of all, boil the water and throw in both yam & potato. Let it cook until it soft. Once it is soft, smash a bit of yam and potato. Then, add in the salad or your preferred vegetable.  Cook it for a while. Finally add in salt & pepper according to your own taste.

CURRY LAMB CHOP

Recently, my wife prepared an awesome dish.  So, I’d like to share her recipe

Ingredients A

  • 2 pieces (Medium) red onion
  • 2 pieces  garlic
  • 1 Medium size ginger
  • 1 Strip lemon grass
  • 2 table spoons  meat/chicken curry powder
  • 1 Packet mixed herbs (contain Cinnamon, Black Pepper, star anise, clover)
  • 1-2 Spoons peanut oil
  • 1-2 Pieces/Spoon tamarind

Ingredients B

  • 1 table spoon mixed herbs powder (To marinate the Lamb Chop)
  • 1 Packet  lamb chop (Can used Chicken – ½ Chicken will do)
  • 2-3 pieces potato
  • 1 Packet coconut milk (mixed with 1 cup of water)
  • 1 Tea spoon  salt/Ajinomoto/sugar (Add according to your own taste)

Note:    Marinated the Lamb Chop with Mixed Herbs Powder (Ingredients B). Marinate the Lamb Chop for 20 minutes – to tender the meat.

Preparation

  1. Chopped  the red onion, garlic and ginger.
  2. Cut the Lamb Chop/Shoulder or chicken into a dice.
  3. Heat the oil and add the red onion, garlic, ginger.  Fried for a while. Add the lemon grass and mixed herbs (Ingredients A). Fried until it smell come out.
  4. Mixed curry powder with water and stir it. Add curry inside and let the curry cook about 3-4 minutes with small fire.
  5. Once curry cook,  add the  tamarind.  Stir it a while.
  6. Add the marinated lamb chop or chicken and potato inside and mixed everything.
  7. Pour a ½ cup of water and close it. Let it cook for 10 minutes and then add coconut milk.
  8. Add salt, ajinomoto and sugar. Stir it until everything mixed and cook until the meat become tender

The Amazing Race…Opps Cucumber lah!

Old folks always say cucumber is not good for women esp when they just giving birth. They said not not for the womb. It’s the coldest veges as mentioned by them. I always not really fancy cucumber unless I have them with “Nasi Lemak”, very famous Malaysian cuisine or should I say snack for breakfast… haha

However as this information came to me last few days, I tend to realize that cucumber is not that bad afterall. Regardless of me always have my wind after taking them ;)

1.      Cucumbers contain most of the vitamins you need every day,
just one cucumber contains Vitamin B1, Vitamin B2, Vitamin B3, Vitamin B5,
Vitamin B6, Folic Acid, Vitamin C, Calcium, Iron,
Magnesium, Phosphorus, Potassium and Zinc.

markers that the kids have used to decorate the walls!!

MELANAU SUSHI-UMAI

“UMAI” described as sushi with attitude, a Melanau traditional delicacy. It is actually a raw fish marinated in lemon, chili, ginger and onions

Ingredients

  • 2 slice of shark fillet (boneless & skinless)
  • 3 Chilies
  • 50g Ginger
  • 1 Red onion
  • 4 Lime
  • Salt
  • MSG

I’ll show step by step how to make it

Chicken soup with jack fruit

Last week I spent my leave at my wife’s hometown, Penampang, Sabah.  Today, I would like to share one simple dish from Sabah. It was prepared by my wife’s granny.

The ingredients are so simple

  • One whole chicken. Take out the head & feet too. Cut it according to your own way whether you want big or small pieces
  • Young Jack fruit, the Sabahan called it Nangko. Don’t buy the ripe one. Peel off the skin. Cut into small cubes.
  • Water
  • 4-6 cloves Garlic, just peel of the skin and crushed it
  • Salt

Preparation

  • Boil the water in the big pot
  • Once the water is boiling, throw in the chopped garlic & chicken
  • Let it cook for 5 to 10 minutes
  • Then, throw in the jack fruit cubes and cook until it become a bit soft.
  • Before you serve, add in a pinch of salt

Steps to prevent hair fall

* Regular use of mild shampoo keeps the dirt and grime off . Clean scalp is the first step towards healthy, unbreakable hair.
* Ten to twelve glasses of water keeps the internal system flushes and eliminates toxins. Great for your entire system and hair.
* Protein intake is necessary through consumption of leafy green vegetables, fruits and dairy products.
* Brahmi oil is great for a lustrous hair.
* Condition your hair twice in a week. Never apply conditioner to the hair roots which aggravates hair fall.
* Vitamins, iron, protein and other nutrients must be present in your food. Spinach keeps you and your hair hearty and healthy.
* Increase the intake of zinc. This prevents hair loss and premature greying. Food items like wholegrain flour contain zinc.
* Surprisingly, copper, stops hair fall. Contained in the blood serum, it prevents hair fall. Peanuts, cashew nuts, beans, whole milk and seeds contain copper. Have them to check hair loss.

Salmon Chowder

EEEuuuuw … never like salmon. I dont know why. Maybe the smell or people dont know how to cook it. But recently I went to my friends’ house with my kids and she made us salmon chowder. It’s very quick and my friend told me Nigella taught her about this recipe… the food goddess ;)

Ingredients
2 cups frozen pepper stir- fry vegetables (yellow, green, and red pepper, and onion)
2 Tbsp. minced seeded jalapeno pepper
1 Tbsp. margarine or butter
2 Tbsps. flour
2 cups fat-free milk
1 cup fat-free half-and-half
2 cups refrigerated diced potatoes with onions
1 15-oz.can salmon, drained and well flaked
1/4 cup snipped watercress
2 Tbsp. lemon juice
1/2 tsp. salt
1/2 tsp. pepper
Directions
1. In a large saucepan cook the stir-fry vegetables and jalapeno in hot margarine for 3 to 5 minutes or until tender. Stir in flour. Stir in milk and half and half. Cook and stir until slightly thickened. Cook and stir 2 minutes more.
2. Stir in potatoes, salmon, watercress, lemon juice, salt and pepper. Cook and stir until heated through.
